Suggest a better descriptionWash and stem the spinach. Wilt in water, or steam, briefly. Let it cool and drain. Squeeze the water out and chop it fine. Add the spinach to the yogurt along with the garlic, peeled and mashed, salt and pepper, and the grated zest and juice of the lemon. Variation: Add toasted cumin seeds.
