melt the butter with the olive oil. saute the shallots and jalapeno for 2-3 minutes. add drizzle of honey and the pine nuts. cook for 2-3 minutes. add the spinach and tun the heat off. let it wilt.
mix the softened cream cheese, sour cream and mayo with salt and pepper. Add in the spinach mixture, the artichokes, chives and most of the cheese (leave some for topping). Mix well and place everything in an oven safe dish. top with the cheese and jalapeno slices.
Bake at 400 for 20 minutes and broil for 2-3 minutes to brown the top. Eat with chips/crackers
