Place garlic clove in small oven safe dish and roast in oven until softened about 20 minutes. Set aside to cool
Place spinach in large mixing bowl and stir in artichoke hearts
Melt butter in skillet and cook and stir the mushroom until softened, about 10 minutes. Mix in the green onions about 5 more minutes. Transfer the mushroom, green onions, and butter from skillet into the bowl with spinach mixture.
Remove cream cheese from wrapping, place in microwave safe bowl and cook until soft about 11/2 minutes. Stir softened cream cheese into spinach mixture, add sour cream, water chestnuts, Parmesan cheese, mayonnaise, garlic salt, lemon juice. Squeeze roasted garlic out if skins and mix into spinach mixture. Spoon into 2 qt. baking dish.
Bake the preheated oven until hot and bubbly, about 30 minutes. Spread onion rings on top and return to oven and bake until browned, 5-10 more minutes
