Cook bacon. Reserve 1 1/2 tablespoon drippings. Chop bacon. Add onion and garlic to drippings, till done. Add spinach, cook till wilted. Toss bacon, onion, bread cubes, and cheese in large bowl. Arrange mixture in an 8 inch square baking dish coated with oil. Combine milk, yogurt, eggs, egg whites, mustard, s/p, stir. Pour evenly over bread mixture. Cover and chill 8 hours or overnight. Bake about 1 hour till strata is brown and inserted knife comes out clean. Let stand 5 minutes before serving,
