Cook spinach according to package directions. Drain off excess water.
Melt margarine in separate pot, sautée chopped onion. Turn off heat, add cream cheese, egg & 1 cup cornbread stuffing. Cover and let stand 5 minutes. Stir together. Add spinach and blend thoroughly.
Grease small casserole dish. Add spinach mixture to dish and cover with remaining cornbread stuffing. Bake at 350for 30 minutes or until top is browned.
