Then combine this mixture to pour to top of spinach mixture:
Make a Bechamel sauce using 1 Tbs butter, melted, 1 Tbs flour and 1/4 cup milk. When thick, add one egg yolk and 1/4 tsp salt.
Beat egg white until stiff and folk into above mixture. Pour this on spinach mixture.
Put baking dish in pan of water. Bake at 350 for 55 minutes.
