Spinach Dhal
1. Rinse lentils with cold water. Add to a pot with water. Bring to a boil, cover, and cook until the lentils are tender / water has been absorbed (about 30 min).
2. Add oil, onion, red bell pepper, and spinach in a separate saucepan. Fry the mixture until the spinach is wilted, stirring frequently (about 8 min). Add the garlic, cumin, and coriander. Fry for another 2 minutes on low heat.
3. When the lentils are done, combine both items together. Add salt / pepper to your liking.
Add to rice, naan, or even bread. Tastes great!
