Wisk eggs with salt and pepper
Heat cast iron pan with cooking fat over medium heat. Add onion, tomato, and any other veggies you have around. Cook until soft, about 4 minutes. Add spinach and cook until wilted. Fold in eggs and cook until set but still wet, about 4 minutes. Drizzle lemon juice and lemon zest on top.
Transfer to oven and broil until brown, about 5 minutes. Cut and serve from pan.
