Preheat oven to 375.
Melt butter in large saucepan. Whisk in flour and cook for a minute. Remove pan from heat and let cool slightly. Whisk in eggs. Then stir in spinach and cheese.
Spread in 1.5-2 qt casserole dish, prepared with non-stick spray.
Bake for 1 hour.
***I have reduced the amount of cheese to 3 cups at times to be more healthy. Still tastes good!***
