Fresh Vegetarian Lasagna that does not miss the beef!
SAUCE
Heat ~2 tablespoons olive oil in a large saucepan.
Add garlic for a minute, then add onions and green peppers. Saute until soft.
Add any other seasonal vegetable(s) that you like, saute until soft.
Add tomatoes, tomato sauce, green olives, basil, oregano, thyme, and salt.
If you want a kick, add a very small amount of cayenne or crushed red pepper.
Simmer on medium heat for ~1 hour.
RICOTTA MIXTURE
Mix all ingredients until thoroughly mixed.
ASSEMBLING THE LASAGNA
Assemble layers in this order:
Coat the bottom and sides of 9 by 11 baking dish with Sauce
Then Repeat This x3:
--Noodles
--Ricotta Mixture
--Spinach
--Sauce
--Mozzarella
--Parmesan
Then top with:
--Noodles
--Sauce
--Mozzarella
--Parmesan
--Diced Basil
--Oregano
BAKING THE LASAGNA
Let assembled lasagna sit in fridge for as long as practical, up to 24 hours. This helps the flavors strengthen.
Bake in oven at 350 for ~1 hour.
Remove from oven and sit out for 15+ minutes until cool enough to serve.
Use as many fresh ingredients as is practical, and mix up the seasonings and vegetables (except basil and oregano, that is required).
