Simple Spinach Lasagna
1. Preheat oven t 350 degrees.In a large pot over medium heat sauté spinach, onion, oregano, basil ad garlic in the olive oil. Pour in spaghetti sauce and water. Simmer 20 minutes.
2. In a large bowl mix cottage cheese, mozzarella cheese, Parmesan cheese, parsley, salt, pepper and egg.
3. Place a small amount of sauce in the bottom of a lasagna pan. Place 4 uncooked noodles on top of sauce and top with a layer of sauce. Add 4 more noodles and layer with 1/2 sauce and 1/2 cheese mixture, noodles and repeat until all is layered, finishing with sauce.
4. Cover with foil and bake in a preheated oven for 55 minutes. Remove foil and bake another 15 minutes. Let sit 10 minutes before serving.
5. Can use chopped fresh spinach (12 oz bag.)
6. Bertolli Marinara w/ Burgundy sauce.
7. Parmesan w/ Reggianno cheese on top.
8. Add 1/2 cup chicken broth with the sauce to the bottom of the pan.
9. Layer Sauce on bottom, noodles, ricotta cheese w/ spinach and mushrooms, sauce w/ turkey sausage, if using turkey sausage, noodles. Top with Parmesan and Reggianno.
Can also substitute gd turkey or another veg for the spinach. Can add mushrooms. Cook whole box of noodles (eliminate water). Can use 26 oz spaghetti sauce. Cook spinach with onion and garlic. Add second egg and use Ricotta sauce. Put sauce straight from bottle on bottom of pan. Layer noodles, spinach mix, noodles, egg mix noodles. Use 9x13 pan for two layers of each filling. Top w/ more sauce and cheese. Bake 35-40 min or until hot in center. (5 min uncovered)
