Super easy soup recipe
In a large pan or Dutch Oven, saute garlic and onion in oil until tender. When onions are almost done, add carrots for a minute or so. Then add broth, salsa and lentils, bring to a boil. Reduce heat, cover and simmer for 1 hour. Stir in spinach and simmer 5-10 minutes.
