2. Add olive oil, rind of orange, orange juice and yogurt to a jar or small glass container with a lid. 3. Shake the jar until the mixture is well mixed, then put in the refrigerator for 15 minutes while you make the salad.
4. Wash and slice the mushrooms.
5. Mix the spinach and radicchio or endive into a large bowl.
6. Add mushrooms and toss gently.
7. Drizzle the dressing over the salad and sprinkle with dried sunflower or sesame seeds.
