Suggest a better descriptionPreheat oven to 375 degrees. Coat a 9-inch pie plate with cooking spray.
Melt 1 tablespoon butter in a skillet over medium-high heat. Add onion. Cook, stirring occasionally, until soft. Add spinach. Cook until heated through, about 5 minutes. Evenly spread mixture into prepared pie plate.
Beat eggs and whipping cream in a large bowl. Stir in salt, pepper, and nutmeg, then pour into pie plate. Cut up remaining 1 tbsp butter and sprinkle along with cheese over pie.
Bake until set and golden brown, 25 to 30 minutes. Let cool 5 minutes.
