Place the pie crust on a rimmed baking sheet lined w/parchment or foil.
In a med skillet over medium heat, drizzle in the olive oil.
Add garlic and onion and sautee until translucent, 5 to 7 minutes. Do not let the garlic burn.
Add the spinach, a little at a time, and cook until wilted.
Season with salt and pepper, set aside to cool.
In med bowl, whisk together the eggs and half and half.
Add lemon zest and thyme.
Add spinach, feta, and 1/2 of the Swiss cheese, and mix until well combined. Season w/ salt and pepper.
Pour mixture carefully into the crust and sprinkle the remaining Swiss over the top.
Bake 40 min or until center is set.
Cool for at least 10 min.
