Squeeze spinach to remove as much moisture as possible.
Add to onion and toss over moderate heat until liquid has evaporated. Remove from heat.
In large bowl, combine ricotta, eggs, salt, pepper, nutmeg, Parmesan, and mix well. Add spinach and mix until it looks like green and white marble.
Pour into pie shell and bake at 350 degrees for 40 to 45 minutes, or until top is golden and filling is set. Let cool for 10 minutes before slicing. Good warm or cold.
