Place all Dressing ingredients except Bacon in a pot. Bring to a boil and boil a few minutes, cool and remove garlic. Dressing can be refrigerated at this point.
To make the salad, fry bacon in skillet, reserving drippings. Cool and finely chop bacon. Place spinach in a large bowl, add the chopped egg and bacon.
Heat dressing to a high simmer, add bacon grease, whisk together. Pour hot mixture over spinach, serve immediately for best flavor.
This recipe makes about over a gallon of dressing, I converted to liters to make scaling simple. If you scale from 16 to 1 you will have about a cup of dressing perfect for two salads.
