The main ingredient of the recipe is spinach.
1. Wash spinach. Baby organic spinach is best. Put this into large bowl with bacon bits.
2. Slice eggs into quarters or smaller. Combine with spinach.
3. Slice shallots into small rings or half rings
3. Combine oil, pine nuts, salt and pepper in medium pan. Heat over medium heat until pine nuts start to color. Turn off heat, stir in shallots slowly. Stir in vinegar and lemon juice.
3. Pour over salad.
