Butter a 2 quart souffle dish.
In a large skillet over medium heat, heat the oil. Saute the onion. Add spinach when onion is soft and cook until wilted. Remove from heat. Chop.
Melt 4 tablespoons butter over medium heat. Whisk in the flour and cook (make a roux) until smooth. Whisk in the milk. Warm until smooth and steaming. Remove from heat.
Whisk in the egg yolks one at a time. Stir in the spinach mixture, parmesan, nutmeg, and salt and pepper to taste.
In electric mixer, beat the egg whites until they form stiff peaks. Mix 1/4 of the whites into the sauce and then fold the remainder together. Pour into souffle dish.
Bake 30-35 mins until puffed and golden.
It will continue cooking a bit after you take it out of the oven, but it's hard to tell if the center is cooked. Perhaps halving the recipe or cooking in individual cups can make it more even.
