1. If using fresh spinach, wash carefully and remove the thick stems. In a stainless steel stockpot, cook the spinach over low heat in only the water that clings to the leaves, stirring until it wilts. Chop and set aside. If using frozen spinach, defrost entirely and squeeze lightly to extract excess liquid.
2. In a large saucepan, heat butter over low heat, add the onion, and sauté until soft. Add garlic for last minute of cooking. (Note: if using dried basil, add it with the garlic).
3. Add 4 cups of the stock, the spinach, the nutmeg, and bring to a boil. Lower the heat and simmer, partially covered, for 10 minutes.
4. Puree the mixture with the fresh basil in a food processor and return the mixture to the saucepan. Add remaining 4 cups of stock and the heavy cream. Bring the soup to a simmer, stirring occasionally. When soup is hot, remove it from heat and stir in Parmesan. Add salt and pepper to taste, garnish with croutons.
Crouton recipe:
8 slices stale Italian or French Bread
1/2 cup olive oil
1. Remove crusts from bread and cut bread into 1/2-inch cubes
2. In a skillet, heat half the oil over medium-high heat, add half the cubes, and fry, stirring constantly, until browned on all sides. Repeat for remaining bread cubes. Set aside until ready to use.
