very tasty spinach stuffed mushrooms
preheat oven to 400 degrees. lightly coat an 8x8x2 baking pan with cooking spray.
Wash spinach and finely chop. Wash mushrooms, set aside 8 to 10 largest caps and chop all the stems and small caps. Melt butter in a medium skillet over moderate heat. Add garlic and heat for 30 seconds. Stir in chopped mushrooms and cook for 5 minutes until golden. Mix in the spinach and oregano and cook, stirring, one minute longer. Stir in lemon juice and remove from heat. Place uncut caps on baking sheet. Fill mushroom caps with spinach mixture, sprinkle with breadcrumbs, and bake 10 to 15 minutes until breadcrumbs are lightly browned.
