Stuff jumbo shells with this ricotta cheese mixture for a healthy and tasty dinner.
Preheat oven to 350 degrees. Cook shells according to package directions. Drain and rinse with cold water to prevent sticking. Wash, drain, and chop spinach. Steam or microwave spinach for 3 to 5 minutes, until tender. Drain well, pressing spinach against side of strainer to remove as much liquid as possible. In a large bowl, mix the spinach, cheese(except Parmesan cheese for topping), egg white, and seasonings. Pour spaghetti sauce into 9x13 inch baking pan. Stuff each shell with about 2 tablespoons spinach mixture and arrange in baking pan. Cover with foil and bake for 25 minutes. Remove the foil, sprinkle with remaining Parmesan cheese, and bake uncovered for 10 minutes longer.
