Spinach-Stuffed Turkey Meat Loaf offers an innovative way to sneak iron-as well as vitamins A and C-into your family's dinner. Low-fat ground turkey breast is enhanced with oats and veggies and kept moist with nonfat milk.
1) Preheat oven to 375°. Coat medium nonstick skillet with nonstick cooking spray. Over low heat, cook spinach, mushrooms and onions 5 minutes, until onion is tender. Remove from heat; stir in 1/4 cup of the Swiss cheese and Parmesan cheese. Set aside.
2) In large bowl, combine turkey, oats, milk, egg white, Italian seasoning, salt and pepper. Spoon two-thirds of turkey mixture lengthwise down centre of 11-inch by 7-inch baking dish. Make indentation down centre of turkey mixture. Fill indentation down centre of turkey mixture. Fill indentation with spinach mixture. Top with remaining turkey; pinch edges to seal.
3) Bake about 40 minutes, until thermometer inserted registers 170° and turkey is no longer pink. Sprinkle with remaining Swiss cheese. Return to oven about 2 minutes, until cheese is melted.
Let stand 5 minutes before slicing.
