In a blender or food processor whirl bread to make crumbs. In a large bowl combine bread crumbs with beef, onion, egg, 1/4 cup of the tomato sauce, mustard, oregano,salt and pepper. On a large sheet of wax paper, pat meat mixture into a 10 x 6 inch rectangle.
Squeeze out as much moisture from spinach as possible;distribute over meat to within 1/2 inch of edges. Sprinkle with garlic salt, then distribute 1/2 cup of the cheese over spinach to within 1 inch of edges.
Using wax paper to help roll meat, roll up jelly roll style. Pinch seam and ends closed to seal in filling. Carefully place meat roll seam side down in a 6 x 9" baking dish.
Bake uncovered in a 350ยบ oven for 40-50 minutes. Remove from oven;spoon out and discard drippings. Pour remaining tomato sauce over meat loaf, return to oven and continue baking for 15 more minutes.
Remove from oven and sprinkle with remaining 1/4 cup cheese; return to oven and continue baking for 5 more minutes or until cheese is melted. With wide spatula, carefully transfer meat loaf to a serving platter.
