Chop the spinach coarsely. Wash in several changes of water.
In a wide sauce pan over medium heat, warm the oil.
Add onion and sauté until golden, about 15 minutes.
Add garlic and cook another one or two minutes.
Add spinach in batches and stir well until wilted, uncovered.
When all leaves are wilted, add raisins and pine nuts.
Note: to prepare the pine nuts: Either toast them and n the oven at 350 for 8 minutes or fry them in the oil until golden brown. Remove and set aside.
