Fresh or canned, this is one of my favorite vegetables.
In a 2 qt. saucepan over medium-high heat, add the spinach, salt, and pepper. Heat through.
Fresh Spinach:
1 (10 oz.) bag of spinach, washed and stemmed
1 tablespoon butter
1 tablespoon oil
salt and pepper to taste
In a medium-size non-stick skillet over medium-high heat, melt the butter. Add the oil, spinach, salt, and pepper. Stirring constantly, cook for 1 -2 minutes or until the spinach is wilted. Serve warm.
