Based on numerous versions enjoyed in Italy.
Rinse spinach thoroughly, place in a large skillet and cover. (Note: do not add extra water. The remaining water on the leaves will be plenty.) Steam for about 10 minutes over medium-low heat, stirring occasionally. Remove from heat, rinse with cold water until cool and drain. Squeeze remaining water out of spinach by hand. Chop spinach coarsely and set aside until you need it.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add spinach being sure to loosen the pieces. Saute for 3 or 4 minutes until heated through.
Serve with a drizzle of olive oil, a squeeze of lemon and lots of pepper.
This dish takes a bit of effort but is well worth it!
