This is a hearty filling soup that can still be considered on the healthy side!
Begin by frying up your bacon till crispy. Chop up into small bits and set aside.
In your soup pot over medium heat, add olive oil, onion, garlic and spices. Saute until onions and garlic have begun to caramelize.
Add your split peas, carrots, bacon, lemon juice and stocks. Simmer for 1 hour, string occasionally.
Optional: To create a thicker soup, I like to remove 2 ladles of the peas and bland them and then reintroduce into the soup.
You're ready to enjoy!
