1) Heat butter in a Dutch oven on medium-high heat. When foaming subsides, add onion and 1/2 tsp salt, cooking 3-4 minutes.
2) Add garlic and cook 30 seconds
3) Add water, ham, bacon, peas, thyme, and bay leaves
4) Bring to simmer on high, reduce heat to low
5) Cover and simmer for 45 minutes
6) Remove ham and cover it with foil to prevent drying
7) Stir in carrots and celery
8) Cover and simmer for 30 minutes
9) Remove bacon, thyme sprigs, and bay leaves
10) Shred ham and add back to pot
11) Season to taste and serve
