Bring peas and water to a boil, simmer for 2 minutes, turn off the heat and allow to soak for 1 hour: do not drain.
Add remaining ingredients to peas and simmer uncovered 2 ½ hours:
Remove meat from bone before serving.
Serve with sour cream if desired. That’s my favorite way.
