1. Melt butter in large stockpot over medium heat. Add onion, carrots, garlic, ham and sugar; cover and cook until vegetables are soft. (8-10 minutes)
2. Add peas and, broth, water, and bay leaf. Increase heat and bring to a boil. Then, reduce heat to medium-low and simmer until peas are soft, about forty minutes. Discard bay leaf and add pepper to taste.
Can be refrigerated for several days, or frozen for a month. The peas will continue to soak up the liquids, so the soup may be to dense if reheated. Just stir in 1/4 cup water at a time untilyou reach desired consistency. Simmer at medium-low until heated.
