A fluffy cornmeal and egg brunch favorite that works with salt and pepper or with heated syrup. Part of a great holiday breakfast or weekend brunch. Pairs well with bacon or ham.
In saucepan, warm milk and add cornmeal. Stir constantly. Add salt, butter, egg yokes and continue stirring until it begins to thicken. Fold in well beaten egg whites and pour into a well greased casserole dish. Bake 350ยบ for 45 minutes. Spoon to plates and offer a choice of butter with salt and pepper or warmed syrup.
In order to fold in the egg whites you may want to whip them early. They fold in best while misture is just setting up and not too dry.
