Yellow squash made slightly sweet with caramelized onions and brown sugar.
Bring a pan of water to a boil and add the squash. Cook just until soft. Drain the squash and pour into a mixing bowl. Saute the onion just until lightly browned and then add to the squash. To the mixing bowl, add the eggs, brown sugar, salt, pepper and bread crumbs. Using a mixer or food processor mix just until well blended.
Spray a 9x9 baking pan with olive oil (or canola oil). Pour the squash mixture into the baking pan, top with the cheese and bake for 30 minutes. Allow to cool for a few minute before serving
You can make this recipe with fresh yellow or butternut squash when it's in season. You will need to cook the squash just until soft so that it mixes well with the other ingredients.
