Heat the oil in a wok or large non stick saucepan.
Gently fry the ginger and garlic and optional chilli for 2-3 minutes.
Add noodles and fry hard for 5-10 minutes, stirring and turning frequently until well heated through.
Add lemon zest and coriander and stir fry for 2 minutes.
Should be light and refreshing, ideally served with a hot and spicy dish such as Squiddy Malay Stir Fried Pork or anything else!
