7-8lb standing rib roast, with mustard horseradish sauce
Two hrs before roasting, remove meat from refrig and allow it to come to room temp. Preheat oven to 500. Place oven rack on the second lowest position.
Place roast in a pan large enough to hold it comfortably, bone side down, and spread top thickly with s&p. Roast the meat for 45 min. Without removing the meat from the oven, reduce temp to 325 and roast for another 30 mih. Increase temp to 450 and roast for another 15-30 min, til internal temp of meat is 125 degrees (make sure thermometer is in center of the roast). The total cook time will be between 1 1/2- 1 3/4 hours. Meanwhile make the sauce.
Suace includes all ingredients above starting with the mayo. Whisk together the mayo, mustards, horseradish, sour cream and salt in small bowl.
Remove roast form oven and transfer to cutting board. Cover tightly with alum foil and allow meat to reast for 20 mihutes. Carve and serve with the sauce. foodnetwork. 12/19/16
