Preheat grill by setting all burners to Hi. Melt & clarify the butter so the steak doesn't burn by scraping the white stuff off the top then pouring the butter out of the container leaving the stuff on the bottom behind. Mix the clarified butter 50/50 with melted coconut oil or other hi-temp oil, then let cool to room temp.
Generously season both sides with salt/pepper then dredge all sides through the 50/50 mix, then place steaks on the IR burner. Turn off the other burners, cook for 2 min, then cross-hatch for 2 more min. Flip-and-repeat, then move steak over for indirect grilling. Closely monitor temp, remove after 125 internal temp for Med, then rest for 5 min.
