1. evenly coat beef with peppercorns.
2. heat pan and add olive oil. sear meat on both sides until golden brown. add cognac and allow to flame. (Be sure to use caution when the cognas ignites. work in a space with lots of ventilation. be very careful under an oven hood to be sure it doesn't catch the fan/filter on fire)
3. reduce liquid by half and simmer, coating both sides of beef. serve immediately.
