Recipe from Main Dishes for All Occasions
1) Preheat oven to 350 degrees.
2) Combine flour, salt and pepper in a plastic bag. Add beef, shake to coat. Melt 3 tbl. butter in a large skillet over medium heat. Add seasoned beef; saute until browned.
3) With tongs, transfer browned beef to a shallow baking dish large enough to hold beef in a single layer.
4) Add remaining butter to skillet. Add onion, sauteing until soft. Add mushrooms, cook 1 minute. Add stock to skillet; bring to a boil. Season mushroom mixture with salt and pepper; pour over beef. Cover baking pan with foil. Bake in preheated oven for 20 minutes.
5) Add potatoes to casserole. Cover and bake 40 minutes longer or until potatoes and steak are tender.
6) To serve: use a slotted spoon to place beef and potatoes in a deep serving dish. Add half and half to cooking liquid left in baking pan. Heat liquid to make sauce; do not boil. Pour over steak, garnishing with parsley.
