Classic steak and sauce using Filet Mignon

Sauté onions in some butter and olive oil in a frying pan (use a heavy sauce pan if more than 2 servings
Add shallots and let soften
Add mushrooms and sauté....then add salt to get rid of the water in the mushrooms
Add the chopped herbs and garlic and let it heat briefly
Add Worcestershire and marsala and a touch of cognac
Add about 2 ladles of beef stock
Add salt and pepper to the sauce
Let reduce while you flatten the beef tenderloin (under plastic wrap and pound with a mallet or bottom of a sauce pan)....you can slice a thicker steak into two and serve two smaller flat pieces instead of one big one
Add salt and pepper to the steak and put butter in a another pan (until getting golden brown) and quickly sear.....1-2 minutes per side...until crusty brown and sizzling
Place the steak on a platter and let rest while you finish the sauce
Remove the sauce from the heat and add a couple of tablespoons of butter to the sauce and melt/mix to incorporate
Add a glug of cognac and the chopped parsley
Add the sauce to the steak on the plate
Add more fresh parsley to the plate
Serve with potato gratin (see separate recipe) and sautéed carrots (steam chopped carrots, sauté in butter with some fresh thyme)
This amount of sauce should be for 4.....if making only for 2, don't overpower the meat with to much sauch. I cut the amount of Madeira (I used Marsal) from 1 cup to 1/2 cup as even though reduced it, it still provided a bit of an overpowering taste.
