Stir in remaining ingredients with about 1/2 cup broth. Substitute combinations of broth, wine, black coffee if desired. Cover and simmer slowly for several hours, until meat is fork-tender. Add more liquid if needed.
Thicken sauce with a little flour or cornstarch dissolved in water or broth if desired.
