Suggest a better descriptionThe most important aspect of grilling a good steak is buying quality. Do yourself a favor and buy from someone other than Kroger/Tom Thumb/Albertsons/etc... It's only a little more expensive at Central Market/Whole Foods and those that you are feeding will absolutely be able to tell the difference. Feel free to buy one large steak and cut it in half after cooking if you're only cooking for two. This is what we generally do.
An hour before grilling the steak, remove from the refrigerator and cover both sides with a course salt (kosher salt or sea salt). Let the steak sit on the counter and come to room temperature. The salt will bring a lot of the water content OUT of the steak which is GOOD thing. I promise you this will be one of the most tender steaks you've ever cooked.
When you're ready to grill, make sure to WIPE OFF ALL OF THE SALT. Some of the salt will have worked down into the grain of the meat, and that will be plenty. If you like a more natural steak, simply sprinkle on some course black pepper on both sides and start grilling.
If you like a more robust flavor for your steak, feel free to add more to your rub or use a rub from the pantry. Just make sure that it doesn't have any salt. The process of pulling out the water will have salted the meat enough, and any more will probably be too much.
When grilling, keep the lid closed as much as possible and try to only flip once.
