Suggest a better descriptionRinse mussels under cold water while scrubbing with vegetable brush.
Discard any broken shells.
Heat oil in 6-8 qt Dutch oven.
Saute shallot, garlic, thyme.
Add mussels and toss.
Add wine, lemon juice, broth, red pepper flakes.
Cover pot and steam over medium-high heat until mussels open. Takes about 5 min.
Toss in tomato, parsley, butter. Recover the pot. Steam for another minute to soften.
Tomatoes should keep their shape.
Serve with plenty of garlic bread.
