The Best Pineapple Cake EVER!
Preheat oven to 350?
CAKE:
With a mixer, beat all ingredients for 5 minutes. Pour into a greased and floured 9x13 pan. Bake for 30-35 minutes until toothpick come out clean. Cool completely.
ICING:
Melt the butter in a medum sauce pan. Add the pineapple and juice. Boil for 2 minutes. Add confectioner's sugar and coconut, stir until incorporated.
Place cake on a platter and poke holes in it with a knife. Pour hot icing over the cake.
