To Prepare Salad:
Place capsicum skin side up on baking tray that has been coated with cooking spray, spray tops of capsicum & place under hot griller until browned, turning once. Leave to cool, then remove skin.
Place remaining vegetables onto flat baking tray that has been generously coated with cooking spray. Spray tops of vegetables and place under hot griller until browne, turning once.
To Make Couscous:
Place couscous in a medium size saucepan (with a lid), add boiling water & combine. Cook covered on low heat for 3 minutes. Using a fork, fluff couscous then fold in margarine.
Place all salad ingredients into a large mixing bowl (including onion & tomato), gently fold together.
To Make Dressing:
Place all ingredients into a small bowl & whisk together.
Pour dressing over salad & fold together.
