Heat 1 tbsp of the oil in a wok and add the harder parts of the stir fry (keeping leafy parts aside) and stir fry for about 5 minutes - in a wide frying pan mix remaining oil, chilli sauce, lime juice, fish sauce and ginger/garlic paste - cook for a few minutes over a high heat until reduced, sticky and bubbling - add the prawns and leafy parts of mix to wok with the veg and cook for 2 or 3 minutes - cook the rice as per instructions - serve the vegetable and prawn mix over steamed rice and drizzle over the sticky sauce
