Easy to make in a pan instead of as individual servings with sauce prepared seperately. The sauce and cake are made as it bakes. The top is somewhat sticky and crisp and almost candy-like. Served warm with ice cream or whipped cream, this is easy and delicious.
Mix Cake Batter
Combine chopped dates in sauce pan with 1 1/2 Cups water. Bring to simmer and cook till soft and paste-like for about 8 to 10 minutes. Remove from heat and put in mixer bowl to cool for ten minutes. Add baking soda, vanilla, oil, egg and buttermilk. Beat for one minute.
Stir dry ingredients together in a bowl: All Purpose flour, baking powder, salt, and sugar. Add to date mixture and beat for one minute. Spread batter evenly in 10 x 10 inch 2 Qt glass baking dish or casserole.
Mix Sauce Dry Ingredients
Combine in small bowl and stir: Brown sugar, corn starch, nutmeg and salt. Sprinkle evenly over the batter.
Prepare Sauce Wet Ingredients
Combine Water, Butter, Rum or Brandy and heat in microwave for two minutes.
Pour gently over cake batter.
Place the cake pan in a shallow pan to collect sauce that might bubble over. Bake in 350 degree oven for 45 minutes to one hour until cake forms on top and is glossy and brown. Remove from oven and cool for a bit before serving. Spoon onto dish or plates and serve with ice cream or whipped cream.
