Melt butter in a large pan
Add all veg and pinch of salt
Cook gently with lid on for 5-10 minutes
Stir in flour and when smooth slowly pour in cider
Cover pan and simmer for 30 minutes
Add milk, Stilton and re-heat still stirring until cheese melts and soup is just below boiling
Season with pepper
Stir in cream
