Delicious dish as a main dish for dinner, or a great breakfast.
Preparation for cooking
- Cut bacon into small square pieces.
- Mince onion
- Mince garlic
- Cube the eggplant
Cooking
1. Place bacon, onion, olive oil, and garlic in large frying pan.
2. Fry the mixture until the onions are semi soft.
3. Drain off the fat and add the Eggplant, salt, and pepper.*1
4. Cook for about 5 minutes on medium heat.
5. Cover the mixture, and let steam until eggplant is semi tender.
6. Add the Parmesan, stir, and serve hot.
*1 You can steam the eggplant ahead of time until it is just tender, and quickly stir it in the as in step 3. Then serve almost immediately. This gives it a more eggplant flavor.
Great for Low Blood Sugar.
