Suggest a better descriptionSlice beef into strips. Combine with 2 t cornstarch, soy sauce, and water. Mix well. Combine sugar, salt, remaining 1 t cornstarch, sherry, and oyster sauce. Mix well.
Drop broccoli into boiling water and cook 1 minute. Drain and rinse under cold water.
Heat wok or skillet until very hot. Add oil, ginger, and beef pieces. Stir quickly to cook beef. Blend in broccoli. Cook 2-3 minutes. Add oyster sauce mixture. Stir until sauce thickens and clear glaze develops. Remove ginger root. Serve with rice.
