1. Heat oil and fry garlic and onion for a minute.
2. Then add courgettes, salt and pepper and stir-fry until all moisture evaporates.
3. Remove from heat and sprinkle over chopped parsley.
4. Serve hot with bread.
Variation: Add 3 beaten eggs and 1 tablespoon flour to cooked courgette mixture when it is cold. Season again with salt and pepper and fry half of mixture in a large well greased pan and make into "Courgette Omelette". Proceed in the same way with remaining courgette mixture. Serve hot with roast meat or chicken.
